THE METHOD

How a coffee becomes an Aseel coffee.

01 · SOURCING

One relationship. One estate.

We do not run a green trading desk. Aseel sources from one named family estate as its spine and supplements the catalogue with a small number of guest single-origins from established, documented producers — each chosen for a specific characteristic that the estate does not produce. No relationship is anonymous. Every lot has a name, a place, and a contact.

01 · We visit before we buy.
02 · We cup before we commit.
03 · We name and date every lot.
"The estate is not a supplier. It is the reason the brand exists."

02 · CUPPING

The table decides what ships.

Every incoming lot is cupped against the SCA protocol in our Dubai lab before it is cleared for roasting. The score you see on the bag is not taken from a producer's certificate — it is our own measurement. Lots that do not meet the threshold for the catalogue are returned or redirected. The cupping score is a commitment, not a marketing claim.

01 · SCA protocol, internal team.
02 · Score verified before every batch.
03 · Below threshold — not shipped.
"The cupping table is the only quality gate that matters. Everything else is preparation."

03 · ROASTING

Roasted in Dubai. The week your bag ships.

The roast date on the back of every Aseel bag is a hand-stamp, applied by the roaster on the day of the roast. Batches are sized to fulfil open orders within a 96-hour window. We do not roast to stock. Green coffee may sit in our storage — but roasted coffee does not wait. The freshness claim on every Aseel bag is structural, not aspirational.

01 · Roasted to order, not to stock.
02 · Roast date hand-stamped per batch.
03 · Ships within 96h of the roast date.
"Roasting to order is a constraint on our operation. It is also our single most important quality decision."

04 · BAGGING

Sealed, stamped, and carried in the QR.

Every Aseel bag is sealed with a nitrogen flush and a degassing valve. The origin seal on the front face is foil-stamped with the lot's data — estate, harvest, variety, process, cupping score. The QR code on the back face encodes the lot ID: scan it to see the full provenance record, the roast date, and the brew parameters recommended for your machine.

01 · Nitrogen flush, degassing valve.
02 · Foil-stamped origin seal per lot.
03 · QR links to lot provenance.
"The bag is the last thing we control. So it is where we put the most care."
